SRI LANKAN MALAY COOKING Salads



GADO GADO

Ingredients

1 lb.beans, 1 lb. long beans, 1 lb. potatoes, ½ cabbage, 1 lb. carrots
1 lb. cleaned peanuts,15 red onions, 1 tsp. chill powder, 1 tsp. ground garlic,
Oil, coconut milk, sugar & salt to taste

METHOD

Boil the beans, long beans, potatoes, cabbage, carrots and eggs. Slice into pieces and arrange on a  salad dish in rows.

For the Peanut Sauce:- Deep fry peanuts in oil and grind finely.
Grind together the red onions and garlic. Temper the onion paste in a little oil and add chilly powder, sugar and salt. Next add sufficient coconut milk to form a thick sauce. Stir well.
Pour the peanut sauce on the vegetables & sliced eggs. Garnish with fried onions.

CUCUMBER SALAD

1 Cucumber
1 big Onion
2 Green Chillies
1 tblsp. thick Coconut Milk
Pepper
Lime to taste
Salt to taste
Maldive Fish chips (optional)

METHOD

Peel the cucumber with a peeler. Wash and cut lengthwise into half and each half into 4. Slice the cucumber pieces into very thin slices. Soak in salt water for  10 mins.
Slice the onions and green chillies. Add pepper, salt & lime to taste and mix it up. Squeeze out the salt water from the cucumber slices and add to the onion sambol. Add the thick coconut milk and mix it up well.

BRINJAL SALAD

Ingredients

½ lb.Brinjal
½ oz. Green Chillies
3 oz. Big Onions
¼ tsp. Turmeric powder
Salt
Lime

METHOD

Wash and slice the brinjals in rounds. Mix in a dash of salt and turmeric and fry until golden brown. Slice the onions and green chillies fine. Add salt and lime and mix well.

STRINGBEANS SALAD

Ingredients

1 lb. string beans cut in 1 in. lengths
5 big onions or 1 oz. red onions
10 green chillies
4 oz. roasted peanuts crushed
4 oz. cooking oil
2 oz. vinegar
2 limes
1 cup water

METHOD

Boil the string beans in vinegar, water and salt for about 10 mins. Strain water and leave aside.
Heat the oil and fry half of the sliced onion till golden brown and leave aside.
Mix together the boiled beans, green chillies, crushed peanuts, salt and the remaining sliced onions, adding a little oil and lime juice. Garnish with fried onion and serve with rice. A pinch of roasted chilly powder could be added if preferred hot.

WINGED BEAN SALAD
Ingredients
10 Winged Beans
A handful of chopped onions
2 green chillies chopped
1/4 cup coconut milk
Salt & Lime to taste
METHOD
String the winged beans and wash well. Hold a few together and slice into thin slices. Mix it with the rest of the ingredients.

MUTTON OR BEEF SEENI SAMBOL

Ingredients

250 gr.minced beef or mutton
200 gr. sliced onions
1 tsp. garlic & ginger ground
½ cup coconut milk
1 dstsp. chilly powder or pieces
4 cardamoms and ½ inch cinnamon
Curry leaves
Ghee
Lime juice
Salt & sugar to taste

Method

Heat ghee. Temper the curry leaves, garlic & ginger paste and onions. Add the chilly powder next and the bruised cardamom and cinnamon. Next add the minced meat and let it fry. Then add the coconut milk and simmer until the gravy dries up. Add lime juice and sugar to taste.

SEENI SAMBOL  (ONION SAMBOL enjoyed with Hoppers, Stringhoppers,)

Ingredients

½ lb. Bombay or big onions
½ lb, Red onions
¼ lb. Maldive Fish chips
¼ lb. Tomatoes
3 dstsps. chilly powder
6 green chillies sliced fine
1 dstsp. garlic & ginger ground
6 cardamoms, 6 cloves, 2 inch piece cinnamon (ground)
A handful of Karapincha (curry leaves)
A piece of Rampe (Pandan leaf)
1 bulb sera
1 cup thick coconut milk
5 dstsps. cooking oil
1 lime & salt to taste
3 dstsps. sugar

Method

Slice the two types of onions fine. Temper the curry leaves, rampe, sera, ginger & garlic paste, and toss in the sliced onions and maldive fish. Add the chilly powder, chopped tomatoes, green chilly, salt and ground spices and cook on a low fire, stirring occasionally. Once the onion mixture is done,  add the coconut milk and simmer until it dries up. Next add the lime juice and sugar and mix well.

COCONUT SAMBOL     (POL SAMBOL)

Ingredients

½ a scraped coconut
1 tsp. chilly powder
1 tsp. maldive fish chips
1 tsp. pepper seeds
1 dstsp. chopped onions
1 green chilly sliced
2 pips garlic
A small piece of ginger
1 tsp. table salt or salt crystals
Juice of ½ a lime

Method

On a grinding stone, grind together the salt crystals, maldive fish chips, pepper seeds and chilly powder. Next add the onions, green chilly, garlic & ginger and grind slightly. Add the coconut and lime juice and mix well.

 KATTA SAMBOL   (Enjoyed with Hoppers and Milk Rice)

Ingredients

2 tsps. chilly pieces
1 dstsp. maldive fish chips
1 tsp. table salt or crystals
2 dstsps. chopped onions
Juice of ½ a lime

Method

Grind or pound the first four ingredients together. Mix in the lime juice to taste.

ONION SAMBOL  (Enjoyed with Pol Rotti, Pittu & Hoppers)

Ingredients

2 big onions
2 green chillies
½ tsp. chilly pieces or powder
1 tsp. maldive fish chips
Salt & lime juice to taste

Method

Slice the onions and green chillies fine. Mix in the maldive fish chips and chilly powder or pieces. Add lime juice and salt and mix well.

Ingredients

2 big onions
2 green chillies
Salt & lime juice to taste

Method

Slice the onions and green chillies fine. Add salt and lime juice and mix well.

SAMBAL BODO   (Enjoyed with POL PITTU)

Ingredients

4 dried chillies
2 big onions sliced fine
Salt & lime juice to taste

Method


Roast the whole dried chillies in a pan. Crush them roughly. Mix in the sliced onions, salt and lime juice.
